Dr. Bekah’s Morning Treat

Quarantine Day #10. We ran out of one of my staples in the house, energy balls. 😱 I start my day with these pretty much every morning with my cup of coffee. The whole fam enjoys them and it is an easy filler to pop in my kids mouths while they wait for me to start breakfast. Super easy, delicious and healthy! Also, if your kids like to help you in the kitchen and enjoy dumping ingredients in a bowl, put them to work! This is a good one for them to help you with 😊

Aside from making energy balls, we enjoyed the sunshine outside with a walk, some time in the sandbox and football in the driveway.

I also saw 3 ocular emergencies in the office. So I am still here if you need me!

Energy Balls

2 cups old fashioned oats

1 cup almond (or peanut) butter

1 cup ground flax seed

1 1/3 cup shredded coconut

1 cup chocolate chips (milk or dark, also can be omitted if you want them to be healthier)

1 cup peanut butter

2/3 cup honey or agave nectar

2 tsp vanilla

Mix all ingredients in a large bowl and place in fridge for 30 minutes. Finally roll into walnut or golf sized balls and place in a Tupperware. I keep mine in the freezer.
